This recipe is purely made from broccoli. This is a way of getting in those green vegetables without it being boring. Broccoli is very rich in vitamin A, C, K, and a lot of other nutrients. So you can with clean conscience eat as much as you would like. This recipe is a nice fresh and crispy way of using your broccoli stalks leftovers. Served as a snack, a light starter, or as a crispy topping on your salads.
- Peel the stalk and cut it into paper thin pieces lengthwise. if necessary use a mandolin iron.
- Place in cold water and put in the fridge a couple of hours before serving.
- Drain the slices, that by now should be curled.
- Drizzle with chopped herbs and your favorite dressing.
