Broccoli Hearts

This recipe is taken from the book “Plantebaseret gourmet” (Plant-based gourmet) by chef Neel Engholm. This book is a great book to purchase if you are interested in how to make your regular vegan meals a little extra special, or you want to up your game in cooking. In this book, Neel really shows off what whole foods can, and how you can turn your simple vegetables into delicious meals, dressings, and snacks to cook for family and friends.

This recipe is purely made from broccoli. This is a way of getting in those green vegetables without it being boring. Broccoli is very rich in vitamin A, C, K, and a lot of other nutrients. So you can with clean conscience eat as much as you would like. This recipe is a nice fresh and crispy way of using your broccoli stalks leftovers. Served as a snack, a light starter, or as a crispy topping on your salads.

Instructions:

  1. Peel the stalk and cut it into paper thin pieces lengthwise. if necessary use a mandolin iron.
  2. Place in cold water and put in the fridge a couple of hours before serving.
  3. Drain the slices, that by now should be curled.
  4. Drizzle with chopped herbs and your favorite dressing.
